Why is it that all kids love wraps? Anything wrapped in bread and they are good to go? I think my kids are happiest when they can grab a wrap or sandwich and run off to play. They don’t want to miss out on any of the fun outside. This saj bread works out great for shawarmas, falafel wraps and even to just dip with hummus and zaatar. I just love how thin and soft saj is. You can make it at home with only a handful of ingredients that we all have in our pantries.

Preparation Time 5 minutes
Rest Time 30 minutes
Cook Time 10 minutes
Yields 8-10
Ingredients
500 grams/ 3 cups flour
1 teaspoon salt
300 ml/ 1 1/4 cups warm water
1 tablespoon olive oil
Instructions
Combine all the ingredients in a mixing bowl. Knead on a medium speed for 3-4 minute until a smooth dough forms.
Cover the bowl with a tea towel and allow it to rest for 30 minutes to allow the gluten to relax and make it easier to roll it out.
Cut the dough into 10 pieces. Roll into balls.
Roll the dough balls out into 8 inch circles. They should be rolled out thin enough to be able to see the colour of the counter underneath.
Heat a pan on the stove over a medium heat and cook the bread on both sides until it gets bubbly, puffed up and golden. Use a folded sheet of kitchen towel to press down on the saj to help it puff up. Remove it from the heat and cover immediately with a tea towel.
Continue with the rest of the dough. Use the saj within 3 days.
Store the saj in an ziplock bag and keep them in the fridge.
