Pickled Red Onions

No burger, wrap or salad is complete without these beautiful pickled red onions! They are tangy, crunchy, slightly sweet and bring the perfect pop of colour to any meal. This is such a quick and easy recipe, and once you make a jar, you’ll want to put them on everything!

Day 1 vs Day 2
Preparation Time 10 minutes
Marination Time 1 day
Yields 2x300 ml jars
Ingredients
3 small red onions
2 cups white vinegar
2 cups water
1/3 cup sugar
2 tablespoons salt
Optional
1 head of garlic- peeled
1 tablespoons whole black peppercorns
Instructions
Thinly slice the onions. Divide the onions between a couple of jars. Add the garlic cloves and black peppercorns.
Heat the vinegar, water, sugar and salt in a saucepan over a medium heat. Stir for a minute until the sugar and salt dissolve.
Pour the warm pickling solution over the onions. Set it aside until cooled to room temperature.
Store the onions in the fridge. The onions keep in the fridge for up to 2 weeks.
When using the onions, always use a clean fork to prevent mold.
