Oatmeal Cream Pies

Oatmeal Cookies are so soft and chewy. And what’s even better is a thick layer of frosting in the middle! This will help make It even softer and chewier. It is an amazing cookie for the holidays. I use these cookies for my holiday cookie boxes!

Preparation Time 20 minutes
Cook Time 14 minutes
Yields 12 sandwiches
Ingredients
Cookies
1 3/4 cups/ 222 grams flour
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
3/4 cup/ 170 grams butter- room temperature
3/4 cup/ 150 grams sugar
1 1/4 cup/ 250 grams brown sugar
3 eggs- room temperature
1 teaspoon vanilla
1 tablespoon molasses
3 cups/ 340 grams oats
Filling
3/4 cup/ 170 grams butter- room temperature
2 1/2 cups icing sugar
1 teaspoon vanilla
1 teaspoon heavy cream
Instructions
Preheat oven 180c. Line 2 baking sheets with parchment paper and set them aside.
Mix the flour, baking powder, baking soda, salt and cinnamon. Set it aside.
Beat butter and sugars on a high speed for 2-3 minutes until light and fluffy.
Add the eggs and mix them in one at a time. Mix in the vanilla and molasses.
Add the flour mixture. Fold in the oats.
Scoop 2 tablespoonful balls onto the prepared sheets, spacing them 2 inches apart.
Bake the cookies at 180c for 12-14 minutes until the edges are golden. Cool them for 5 minutes before moving them to a cooling rack to cool completely.
Beat all the ingredients of the filling for 2-3 minutes until light and fluffy. Pipe the filling onto half the cookies and sandwich the remaining cookies over.
