The weekend is perfect for family breakfasts and I love to entertain. The kids want to eat something completely different to the adults, so I end up making a few dishes for brunch and invite many people over so we can all enjoy the weekend together.
This mixed berry overnight French toast bake is fantastic. It is prepared the night before and all I have to do is put it in the oven in the morning. It’s great because I can get on with other brunch items in the morning instead. This French toast bake is great because you can exchange the berries with caramelised bananas or even caramelised apples. It can be easily adapted to suit your family’s needs. Serve with whipped cream or even a huge scoop of Nutella and chopped nuts. It is fantastic and loved by everyone!Â

Serves 8Â
IngredientsÂ
1x 15 oz loaf of Brioche bread- cut in 1 inch cubesÂ
2 cups mixed berriesÂ
8 eggsÂ
2 cups almond milkÂ
1/4 cup sugarÂ
1/4 cup light brown sugarÂ
1 tablespoon vanillaÂ
1 tablespoon cinnamonÂ
1/4 teaspoon saltÂ
2 tablespoons butter- for coating the panÂ
Instructions
Coat a 9x13 inch baking dish with the butter. Arrange the bread cubes evenly in the bottom of the dish. Top the bread with the berries. Set it aside.Â
In a large bowl, whisk together the eggs, milk, sugars, vanilla, cinnamon and salt. Whisk well.Â
Pour the mixture over the bread and berries. Cover with cling film and chill it overnight/ 8 hours.Â
The next morning remove the cling film and cover in foil. Bake at 180c for 55-60 minutes. Broil for 2-3 minutes. There shouldn’t be liquid in the middle.Â
Serve with whipped cream, nutella or nuts.Â
