Mexican Street Corn Potato Salad 

I love potato salad so much, I’ll make it in as many forms as possible. This Mexican Street Corn Potato Salad was so good. I served it with chicken strips and burgers for the kids. It’s a nice change from fries or even pasta salad.  It was also a huge hit at the family bbq.



Preparation Time 15 minutes 

Cook Time 30 minutes 

Chill Time 1 hour 

Serves 4


Ingredients


400 grams potatoes- peeled, cubed and boiled

1 teaspoon salt 

3 eggs- hard boiled 

1/2 mayonnaise 

1/8 cup chicken stock 

1-2 tablespoons hot sauce 

1-2 tablespoons lemon juice 

1/2 teaspoon salt 

1/8 teaspoon chilli powder 

1/2 teaspoons black pepper 

3/4 cup sweetcorn - boiled

1/8 cup red onion- chopped 

1/8 cup feta cheese- cubed 

1 tablespoon coriander- chopped 

2 tablespoons green onion- chopped 




Instructions


  1. For the dressing: combine the mayonnaise, salt, pepper, red chilli powder, hot sauce, lemon juice and chicken stock. Mix well 

  2. Add the potatoes, eggs, onions, coriander and corn. Gently fold it all in. 

  3. Fold in the feta cheese and green onions 

  4. Pour into a serving bowl and top with extra feta cheese and chopped green onions. 

  5. Chill for 1 hour before serving
