Marry Me Chicken / Tuscan Chicken

This easy chicken recipe is perfect for a mid week meal. It comes together in minutes and tastes amazing. Marry me chicken is also known as Tuscan chicken. The reason why they call it ‘marry me chicken’, is because apparently it tastes so good that you will want to marry it! And once I tried it, I can totally agree (sorry hubby!) Serve this with pasta and you will be so happy you gave this recipe a go!







Preparation Time 10 minutes

Cook Time 20 minutes

Serves 4-6

Ingredients


1 kg chicken breasts- butterflied and pounded evenly.

1 teaspoon salt

1 teaspoon garlic powder

1 teaspoon oregano

1/2 teaspoon black pepper

3 tablespoons butter

2 tablespoons oil

1/2 onion- diced

3 cloves garlic- minced

1/4 teaspoon crushed red chilli

1/2 cup chicken stock

1 1/2 cup heavy cream

100 grams sun dried tomatoes






Dredge


1/2 cup flour

1 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper











Instructions

  1. Combine the chicken, garlic powder, oregano, salt and pepper. Mix well and set aside.

  2. Combine the flour dredge ingredients. Mix well and set aside. Set up dredging station.

  3. Dredge the chicken in the flour mixture.

  4. Fry the chicken in the oil and butter. Fry each side for 3-4 minutes until golden brown. Remove from the pan and set aside.

  5. Do not clean the pan. Add 1 tablespoon butter to the pan again. Add the onion and sauté for 2-3 minutes until softened and translucent. Add the garlic and sauté 2 minutes.

  6. Add chilli flakes, sun dried tomatoes and sauce 2 minutes. Add the chicken stock. Lower the heat. Stir in the heavy cream. Cook on low heat for 2-3 minutes

  7. Add the chicken and coat it in the sauce. Allow the chicken to simmer in the sauce for 5 minutes. Serve with pasta.
