Beef stroganoff is just one of those recipes that are perfect for a cold night, when all you want is something to warm you up right to your soul. Cuddling up together and enjoy this warming delightful dinner. Serve with rice, baked potatoes and veggies. What better way to end a long, cold evening.
Ingredients
1 kg beef sirloin/ rump - cut into 1 cm strips
3-4 tablespoons oil
1 large onion- chopped finely
4-5 cloves garlic- minced
400 grams mushrooms - sliced
2 tablespoons flour
1 1/2 tablespoons smoked paprika
500 ml chicken stock
Salt and pepper- to taste
300 ml heavy cream
Squeeze of lemon
Instructions
Heat the oil in a large, heavy bottom pan. Saute the onion for 3-4 minutes until translucent.
Add the garlic and sauté for 2 minutes until fragrant.
Add the mushrooms and sauté for 5-6 minutes until the water dries up. Remove the mushroom mixture from the pan and set it aside in a bowl for later.
Coat the beef in 2 tablespoons flour. Shake off the excess. Fry the meat in batches with the paprika. Add the paprika in sections along with the meat. Cook the meat off until well browned. Place all the meat into the pot.
Add the mushroom mixture back to the meat. Top it off with the chicken stock.
Bring it to a boil and cook it down on a low heat for around 20 minutes until stock is reduced by 50% and it thickens.
Adjust the seasoning.
Serve with rice or pasta and a serving of vegetables.
