Cookie LayerÂ
1/4 cup butter- meltedÂ
1/6 cup sugarÂ
1/4 cup brown sugarÂ
1/2 egg- beaten- reserve rest for the brownie layerÂ
1/2 teaspoon vanillaÂ
1/ teaspoon baking sodaÂ
1/4 teaspoon saltÂ
3/4 cup flourÂ
3/4 cup chocolate chipsÂ
Brownie LayerÂ
55 grams chocolateÂ
1/3 cup butter
3/4 cup sugarÂ
1 1/2 eggs- beatenÂ
1/2 teaspoon vanillaÂ
1/4 teaspoon saltÂ
1 tablespoon unsweetened cocoa powderÂ
1/2 cup flourÂ
1/2 cup NutellaÂ
16 OreosÂ
Additional chocolate chips and 2 Oreos for the top of the browniesÂ
InstructionsÂ
Preheat the oven to 180c. Line an 8 inch square pan with foil. Grease with butter and set it aside.Â
Make the cookie layer: cream the butter and sugars together for 3-4 minutes until light and fluffy. Add the egg and vanilla. Mix it through. Add the dry ingredients and stir to combine. Fold in the chocolate chips. Press the cookie dough into the 8 inch pan. Set it aside.Â
Spread the Nutella over the cookie dough. Top it with the Oreos. Set it aside.Â
Make the brownie batter: Melt the butter and chocolate together in the microwave at 30 second bursts until smooth. Add the sugar and mix it in. Stir in the beaten eggs and vanilla. Fold in the dry ingredients.Â
Pour the brownie batter over the Oreos. Top with extra broken Oreos and chocolate chips.Â
Bake at 180c for 30-32 minutes. The top will no longer jiggle.Â
Cool the Loaded Brookie Bars before slicing and serving.Â
