Lemon Pepper Chicken Skewers
These Lemon Pepper Chicken Skewers are one of those easy chicken recipes that are absolutely packed with flavour! The chicken is marinated in lemon and herb seasoning, plenty of black pepper, garlic, smoked paprika and a little honey before being threaded onto skewers and cooked until juicy and golden.
The part that really makes these delicious though is the buttery lemon pepper mixture brushed over the chicken while it is still piping hot. It melts straight over the skewers and gives them that lovely buttery, garlicky finish.
I love that you can make these either in the oven or the air fryer, so they are perfect for an easy lunch or dinner. Just give the chicken plenty of time to marinate and the rest comes together really quickly.

Ingredients
For the Chicken
500g boneless chicken- cubed
1 packet Nando's Lemon & Herb Seasoning (Recipe here)
2 tsp black pepper
1 tsp garlic powder
1 tsp smoked paprika
2 tsp vegetable stock powder
1 tbsp olive oil
1 tbsp honey
Juice of 1 lemon
For the Lemon Pepper Butter
1 knob butter- approximately 30g
1 tsp dried parsley
1 tsp black pepper
½ tsp garlic powder
Instructions
Place the cubed chicken into a large bowl. Add the Nando's Lemon & Herb Seasoning, black pepper, garlic powder, smoked paprika, vegetable stock powder, olive oil, honey and lemon juice. Mix everything together really well, making sure all the chicken pieces are evenly coated in the marinade. Cover and refrigerate for 6 hours.
When you are ready to cook, thread the marinated chicken pieces onto skewers.
To Cook in the Oven: Preheat the oven to 200°C. Arrange the chicken skewers on a baking tray and bake for approximately 15 minutes, turning them over during cooking, until the chicken is cooked through and lightly golden. To Cook in the Air Fryer: Place the skewers into the air fryer and cook for approximately 10–14 minutes, turning halfway through, until golden and completely cooked through. The exact cooking time will depend on your air fryer and the size of the chicken pieces.
Make the Lemon Pepper Butter. While the chicken is cooking, place the butter, dried parsley, black pepper and garlic powder into a small microwave-safe bowl. Microwave just until the butter has melted, then stir everything together.
As soon as the chicken skewers come out of the oven or air fryer, generously brush the hot chicken with the melted lemon pepper butter.
Serve immediately while the chicken is still hot and juicy.

I love serving them with fries or roasted potatoes, a fresh salad and a creamy ranch or garlic dip on the side.
