Homemade Salsa

I love trying new dips with chips, however I had never made homemade Salsa. With the kids at home all the time these days, I wanted to make something different, something new. Salsa can be made using tinned tomatoes, or even fresh tomatoes, which is what I opted for. The tomatoes came from our garden, the limes from our trees, and even home grown chillies. It doesn’t get better than that, does it?


This salsa comes together in literally 5 minutes and doesn’t require much leg work. Just pulse the blender a few times for chunky salsa, and blend completely for smooth salsa. Theres no need to chop and slice every ingredient; throw it all in a blender and let it do its thing. After blending the ingredients, I usually strain the mixture to remove the extra liquid from the salsa, then I refrigerate it so the flavours can develop.


I got asked a few questions when I decided to write this recipe:


How do I store the salsa once its made?

This salsa can be stored in an airtight container and in the fridge for up to 7 days, but it won’t last that long.


Which is better? Tinned tomatoes or fresh tomatoes?

I would always say fresh tomatoes are best, but tin tomatoes work well if you don’t have fresh ones on hand.


Do I have to use the sugar?

No, the sugar is optional, I don’t always use the sugar when I cook for my kids, but when I worked on this recipe, the sugar worked well to balance out the flavours.

Serves


Ingredients 

6 large tomatoes – quartered and hulled

2 green chillies – halved and deseeded

1 medium onion- roughly chopped

1 teaspoon tomato paste

3 cloves garlic – halved

A handful of coriander

1/2 teaspoon salt

1/2 teaspoon cumin powder

Juice of half a lime 

Use fresh tomatoes for great flavour!

Instructions 

  1. Combine all the ingredients in the blender and pulse until a chunky consistency.  For a smoother consistency, blend until smooth.  

  2. Serve with fajitas or with tortilla chips.
