I love making sweets and treats at home for the kids, because we are limited on flavours when we get them from the shops. Making my own marshmallows at home, mean that I can customise them with amazing flavours and fillings. And the best thing about this recipe is that these marshmallows do not have any corn syrup in them. I don’t make anything that has corn syrup in it, or I try to recreate recipes that do not need corn syrup at all.
Preparation Time 30 minutes
Cook Time 20 minutes
Yields 24 marshmallows
Ingredients
10 gram gelatine
1/2 cup water- separated and cold
200 grams/ 1 cup sugar
Corn starch- for dusting
Instructions
Mix gelatine and 1/4 cup water in bowl. Mix well and set aside to bloom for 10 minutes.
Oil and dust an 8 inch square pan with corn starch.
Combine 1 cup sugar and 1/4 cup water in a saucepan. Cos on a low heat for 10 minutes until the sugar dissolves.
Pour the sugar into a large bowl with high sides.
Add the gelatine mixture and mix it into the sugar syrup until dissolved.
Beat the sugar mixture on a high speed for 10-15 minutes until soft, thick and glossy peaks form. Add desired flavourings and colour. Mix it in.
Pour into prepared container.
Rest on a counter for 2-3 hours until set.
Dust the top with cornstarch, cut into squares and dust them in cornstarch too.
Store in an airtight container for 2-3 weeks.
