Greek Salad

I love Greek Salad. It has everything! Freshness from the veg, saltiness from the olives, creaminess from the feta and a punch of flavour from the dressing! It’s so easy and comes together really quickly. It makes a great addition to our menu on pizza night.

I usually get my kids to help by mixing the dressing ingredients then cutting the tomatoes, or even crumbling the feta.  They love helping out in the kitchen and it keeps them busy.  Turn your Friday night dinner into a family affair, by letting the little ones take over. You may be surprised with the results!

Preparation time 15 minutes

Serves 4


Ingredients


Dressing


6 Tablespoons olive oil

1 1/2 Tablespoons freshly squeezed lemon juice

1 T vinegar

1 1/2 teaspoon minced garlic- around 1 large clove

1 1/2 Tablespoons fresh parsley- chopped

1 teaspoon dried oregano

1 teaspoon honey

Salt and pepper- to taste


Salad


4 medium tomatoes- diced

1 medium cucumber- cut into half moons

1/2 small onion- thinly sliced

1 green pepper- chopped

3/4 cup black olives- deseeded and sliced

4 oz/ 1 cup feta cheese- crumbled 


Instructions

  1. Add all the dressing ingredients in a small bowl. Whisk until combined. Season with salt and pepper to taste. Refrigerate until ready to use.

  2. Combine the tomatoes, cucumber, onion, bell pepper, olives and feta cheese in a salad bowl.

  3. Drizzle the dressing over the salad a few minutes before serving. Gently toss the salad to coat the ingredients.
