Focaccia Pizza

Focaccia is something that most bakers can try their hand at and be successful in making. This week my husband was away and the kids wanted pizza. I already had dough rising for my focaccia bread and thought, why not try this as the base for the pizza? And I am so glad I did. The base of this pizza was soft and so light and airy. Something that normal pizza dough doesn’t have. But I will definitely make this focaccia pizza again soon, with different toppings.

Preparation Time overnight plus 1 1/2 hours
Cook Time 30 hours
Yield 9x13 inch pan /4-6 people
Ingredients
Focaccia
4 3/4 cup / 570 grams flour
1 tablespoon/ 12 grams salt
2 1/4 teaspoons yeast
2 cups warm water- 42c
1/4 cup olive oil
1 tablespoon sugar
Pizza and Toppings
Optional toppings
2 cups pizza sauce
2-3 cups shredded cheese
1 cup ricotta cheese
Oregano
Instructions
Mix the flour, salt, sugar and yeast in a large bowl. Add the olive oil and water to the dry ingredients. Mix it in with a spatula or a wooden spoon for 2 minutes. The dough will be sticky. Cover the dough with a cloth and let it rest at room temperature for 30 minutes.
Stretch and fold the dough with wet hands. Let the dough rest for 30 minutes. Repeat this step 3 more times. Cover and chill the dough in the fridge for 12-48 hours.
When you are ready to bake the pizza, bring the dough to room temperature for 30 minutes.
Grease a 9x13 inch baking dish with olive oil. Place the dough in the dish and coat the dough in the oil. Let the dough rise until doubled in size, around 45 minutes.
Make dimples in the dough. sprinkle the top with half the cheese. Spread the pizza sauce over the cheese and top with your optional toppings. Finally sprinkle over the remaining cheese and oregano.
Bake at 200c for 25-32 minutes until golden and bubbly. Cool the focaccia pizza for 10 minutes before removing it from the pan and serving.
