I wasn’t feeling well the last couple of weeks and didn’t feel like eating anything heavy. So seeing as fish is full of Omega’s and Protein, I thought this light, flavourful fish en papillote was delicious and so easy to bring it together. While the fish baked, I put together some steamed veggies and mashed potatoes. The kids ate this Fish en Papillote without fuss and loved the garlic, lemon butter sauce! So that’s a huge win in my books, especially with me feeling so down today!
IngredientsÂ
6 Cod FilletsÂ
1/8 cup butter - room temperatureÂ
1/8 cup olive oilÂ
2 cloves garlic- mincedÂ
2 tablespoons fresh coriander- choppedÂ
1/2 teaspoon saltÂ
1/2 teaspoon black pepperÂ
2 tablespoons cajun spiceÂ
Zest of 1 lemonÂ
1 lemon- sliced- I used the same lemon I zestedÂ
1 cup cherry tomatoes
2-3 tablespoons fresh dillÂ
InstructionsÂ
Combine the butter, olive oil, garlic, coriander, salt, pepper, cajun spice and the lemon zest. Mix it well.Â
Cut the lemon into slices. Set them aside.Â
Assemble the bags with parchment paper. Place the fish in the middle of a sheet of parchment paper. Brush the butter on both sides of the fish. Top the fish with lemon slices and cherry tomatoes.Â
Close the parchment paper up to create a bag. Place the bags on a baking tray and bake the fish at 180c for 15-20 minutes.Â
Once the fish is baked, remove it from the oven, garnish with fresh dill then serve.Â
Serve with mashed potatoes and vegetablesÂ
