Breaded Fish Fingers

I think fish is a great ingredient to work with. And as a kid, we used to eat a lot of fish fingers. Now that my kids are growing up at the speed of light, I can't keep up with the number of fish fingers so I make my own now. I can make them so much better and just the way the kids like it.


These breaded fish fingers are made with fish fillets, just sliced into thick fingers. This recipe is something I will throw together when the kids and in the mood for fish and chips. Add some tartar sauce and some spicy potato wedges and you have the perfect evening meal.

Serves 4


Ingredients


600 grams fish fillets- cut into fingers- patted dry

1 3/4 cups panko crumbs

2 teaspoons paprika powder

1/2 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon garlic powder


Batter


2 tablespoons flour

1/4 teaspoon salt

1/4 teaspoon black pepper

1 large egg


Tartar Sauce


1 cup mayonnaise

1 cup pickles- chopped finely

1 tablespoon dill- chopped - optional

1 teaspoon lemon juice

1 teaspoon sugar

1/4 teaspoon black pepper

1/4 teaspoon salt

1 teaspoon American mustard


To serve


Lemon wedges







Instructions


  1. Tartar Sauce: combine all the ingredients for the tartar sauce. Pour into a bowl and refrigerate until ready to use.

  2. Preheat the oven or your air fryer to 180c.

  3. Combine the flour, salt and pepper to make a seasoned flour. Mix it well.

  4. Dip the fish in the seasoned flour and shake off the excess flour. Place the fish in a plate and set it aside.

  5. Combine the panko crumbs, 2 teaspoons paprika, salt, pepper and garlic powder. Mix well.

  6. Dip the floured fish in the beaten egg, then in the breadcrumbs.

  7. Place the fish on a greased oven tray or in the air fryer basket.

  8. Bake/ air fry the fish for 13-15 minutes until golden brown and crispy.

  9. Serve the fish with lemon wedges, tartar sauce and potato wedges.
