I love making cookies! They are always great with a huge glass of milk! These Double chocolate oatmeal cookies are fabulous! I love the soft batch flavour stuffed with chocolate-y goodness.

Yields 1 dozen large cookies
6 tablespoons butter- softened
1/4 cup sugar
3/4 cup light brown sugar
1/2 teaspoon vanilla
3/4 cup flour
3 Tablespoons cocoa powder
1/2 teaspoon baking powder
1/8 teaspoon baking soda
1/8 teaspoon salt
1 cup rolled oats
1/2 cup chocolate chips- plus extra for topping
Preheat the oven to 170-175c. Line 2 baking sheets with parchment paper. Set them aside.
In a bowl: combine the flour, cocoa powder, baking powder, baking soda and salt. Mix well. Set aside.
Beat the butter, sugars and vanilla for 4 minutes until light and creamy. Add the egg and mix it through.
Add the flour mixture. Mix it through until just combined. Add the oats and fold them in. Add the chocolate chips and fold through once more.
Scoop the cookie dough onto the prepared baking sheets, making sure you space them 2 inches apart.
Bake the cookies at 170c for 11-13 minutes. Take them out of the oven and top with additional chocolate chips. Allow to cool to room temperature.
Serve with a cold glass of milk.
