Sugar cookies are a family favourite! They are best served with a glass of cold milk, or as my mum feels, even with a cup of tea. But what's not better with tea????
These easy cookies are so quick and do not require any chilling time. Which means that they are a great and easy treat, ready in no time.
Preparation Time 30 minutes
Cook Time 10 minutes
Yields 30 cookies
Ingredients
2 3/4 cups all purpose flour
2 tablespoons corn flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup butter- room temperature
1 cup and 2 tablespoons sugar
1 egg
2 teaspoon vanilla
Instructions
Preheat the oven to 180c. Line 2 baking trays with parchment paper. Set them aside
Beat butter and sugar for 10 minutes until light and fluffy. Add the egg and mix well until well combined. Scrape down the sides of the bowl and mix it through once more.
Add the flour, baking powder, baking soda, corn flour and the salt. Mix until just combined.
Roll into 1 1/2 tablespoons and place onto the baking tray 2-3 inches apart. There's no need to chill the dough before baking.
Bake the cookies for 7-8 minutes, until golden and crinkly. Allow them to set on the baking trays before moving them to a cooling rack.
