Copycat Starbucks Lemon Loaf Cake

I am a fan of all things lemon! Aren't you? I tried Starbucks lemon loaf cake a while back but obviously since lockdown I have had to resort to all homemade baked items. I have to say... this cake is amazing! You are going to love this recipe. Check it out below...







Preparation Time 15 minutes

Cook Time 45 minutes

Yields 10 slices


Ingredients


1/2 cup butter- softened

1 cup sugar

1/3 cup sour cream

2 teaspoons vanilla

1 teaspoon lemon extract

3 eggs

2 Tablespoons lemon zest

1 Tablespoon lemon juice

1 1/2 cups all purpose flour

1/4 teaspoon baking sida

1/2 teaspoon baking powder

1/2 teaspoon salt


Icing


1 cup powdered sugar

1 Tablespoon milk

1 Tablespoon lemon juice

a pinch of salt







Instructions


  1. Preheat the oven to 200c. Line a 9x5 inch loaf tin with parchment paper or with a loaf cake liner.

  2. Combine the flour, baking soda, baking powder and salt in a bowl. Set aside.

  3. Beat the butter, sugar and lemon zest until light and fluffy.

  4. Add the eggs one at a time beating until fully incorporated. Scrape down the sides after each addition.

  5. Add the sour cream, vanilla, lemon extract and the lemon juice. Beat well to combine.

  6. Slowly add the dry ingredients into the wet ingredients and mix to just combine. Do not over mix. Over mixing will result in a dense cake.

  7. Pour the batter into the lined loaf tin. Level with a spatula.

  8. Bake at 180c for 45 minutes or until an inserted skewer comes clean.

  9. Cool the cake on a cooling rack.

  10. In the meantime, let's make some icing. Combine the icing sugar, pinch of salt and lemon juice in a bowl.

  11. Slowly add the milk until you get a thick icing. You may not need to add all the milk. I only needed around 1 teaspoon of milk to bring it together.

  12. Spread the icing over the top of the cake and leave to set before cutting into slices and serving.
