Chicken Parmesan has always been a favourite of mine. I enjoy how simple but hearty this meal is. The kids love it and prefer to eat it with spaghetti. Because, as everyone knows, spaghetti is messy and kids love making dinner time messy. This chicken parmesan went down a treat with my kids. They ask me to make it a couple times a month at least. But because I make so many different cuisines they don’t get to eat it as often as you think.Â

IngredientsÂ
ChickenÂ
4 eggsÂ
1 tablespoon garlic- mincedÂ
4 tablespoons coriander- choppedÂ
1/2 teaspoon saltÂ
6 chicken breasts- halvedÂ
3 cups breadcrumbsÂ
1 teaspoon garlic powerÂ
1 teaspoon onion powderÂ
1 teaspoon saltÂ
1 teaspoon black pepperÂ
1/2 cup olive oil- for fryingÂ
SauceÂ
1 tablespoon olive oilÂ
1 large onion- choppedÂ
1 tablespoon garlic- mincedÂ
1 kg tomatoes- pureedÂ
1/2 teaspoon saltÂ
1/2 teaspoon black pepperÂ
2 teaspoons Italian herbsÂ
ToppingÂ
220 grams mozzarella cheese- slicedÂ
1/3 cup parmesan cheese- shreddedÂ
2 tablespoons coriander- choppedÂ
Instructions
For the chicken: Combine the eggs, garlic, coriander, salt and pepper in a shallow bowl. Mix it all in. Add the chicken to the egg, cover the chicken properly. Cover in cling film and allow to marinate for 15 minutes.Â
For the sauce: heat oil in a pan, sauté the onion and garlic for 3-4 minutes until translucent. Add the tomatoes, salt, pepper and Italian herbs. Bring the sauce to a boil, cover and cook it on a low heat for 20 minutes. Set the sauce aside for later.Â
When ready to cook, mix the breadcrumbs, garlic powder, salt and pepper in a shallow bowl. Mix it well and set up your dredging station.Â
Dip the chicken in the breadcrumbs and coat the chicken evenly. Shake off any excess bread crumbs and set the in a plate.Â
Preheat the oven 180c. Line a tray with a light spray of oil and set it aside.Â
Heat oil in a skillet. Fry the chicken in batches for 4-5 minutes each side until golden and crispy.Â
Remove the chicken from the oil and place it on the baking tray. Top the chicken with 1/3 cup sauce. Top the sauce with the mozzarella and the parmesan cheese.Â
Bake for 15-20 minutes until the cheese is melted and bubbly, and the chicken is cooked through.Â
Toss the remaining sauce in some boiled pasta, and serveÂ
