Elaborate dinners aren’t always in the cards. Instead I’ll make a huge pot of daal and then serve kebabs or chicken tikka on the side for the kids. They love daal and kebabs. This Chicken malai tikka is so easy to make and tastes delicious with a quick squeeze of lemon. I love serving this chicken malai tikka with naan! It is heavenly!!!!!!Â
IngredientsÂ
1/2 kg chicken breasts- cut in 1 inch piecesÂ
1/2 tablespoon garlic pasteÂ
1/2 tablespoon ginger pasteÂ
1 teaspoon saltÂ
1 lemon- juiceÂ
1/2 cup creamÂ
1/2 cup Greek yogurtÂ
1 tablespoon green chilli pasteÂ
1 teaspoon white pepperÂ
1 teaspoon cumin powderÂ
1 teaspoon black pepperÂ
1/4 teaspoon green cardamom powderÂ
1/4 teaspoon cinnamon powderÂ
1/4 teaspoon saltÂ
Handful coriander leaves
Butter- as neededÂ
Coal for smokingÂ
InstructionsÂ
Cut chicken into 1 inch cubes.Â
Add 1 teaspoon salt, ginger, garlic and lemon juice. Mix well and set aside for 20 minutes.Â
In another bowl, combine the cream, yogurt, green chillies, white pepper, cardamom powder, cumin, black pepper, 1/4 teaspoon salt and coriander.Â
Add the chicken to the yogurt mixture. Marinate overnight, or at least 3-4 hours.Â
Soak the skewers in water for 30 minutesÂ
Thread chicken onto skewers.Â
Melt 2 tablespoon butter in a pan, add 1 teaspoon oil. Add the chicken and grill on a high heat in batches for 3-4 minutes each side until caramelised.Â
Once all the chicken is grilled add it back to the pan. Place a piece of hot coal in a small foil cup. Drizzle some oil over the coal and cover to smoke the chicken for 2-3 minutes.Â
