Chicken And Cheese Handi

Being Pakistani means that we understand flavour and that translate into all of our food. We are always trying to add robust, deep flavours into every meal. Making sure it’s something that everyone will remember. So usually we make a chicken handi, but I wanted to try something different this time. Chicken and cheese goes well, so why not a chicken and cheese handi? The kids were very happy eating this with garlic naan and salad. my husband loved it so much he asked me to make for dinner next week too. And to be honest, this is one of those meals I am going to want to cook when I’m looking for a quick girl dinner. It is that delicious.

Serves 4-6
Ingredients
1/8 cup oil
1 teaspoon garlic paste
1 teaspoon ginger paste
1 kg boneless chicken breasts- cubed
1 green chilli- cut in 2 pieces
1 medium green pepper- chunks
1 teaspoon salt
1 teaspoon coriander powder
3/4 teaspoon garam masala
1 teaspoon chilli flakes
1 teaspoon black pepper
1 cup yogurt
200 ml heavy cream
1 teaspoon cumin powder
Handful of coriander - chopped
1 cup cheese- shredded
Instructions
Heat oil in a pot. Add the garlic and ginger paste. Sauté it for 30 seconds. Add the chicken and cook it through until the colour changes. Add the green chilli and green pepper.
Add the salt, coriander powder, garam masala, chilli flakes, black pepper and cumin. Add the yogurt and cook it off for 2-3 minutes on a high heat.
Add the heavy cream. Mix it in once more, cook on low for 5-6 minutes. Add the shredded cheese. Mix well and serve.
Serve with naan and salad.
