Biscoff Strawberry Cheesecake Cups 

I entertain a lot of guests all the time and I have to learn to make dishes very quickly because sometimes those guests show up without much warning. These biscoff strawberry cheesecake cups were a lovely addition to a dinner party I hosted a few weeks ago. 


The cinnamon biscuit crumb, with a smooth sweet cream and a rich and thick strawberry coulis. All chilled to perfection. You can’t be this dessert idea, if you are looking for something quick and easy to make. 



Biscoff Strawberry Cheesecake Cups 


Preparation Time 10 minutes 

Cook Time 15 minutes 

Chill Time 2 hours 

Serves 6-8


Ingredients 


Filling


220 grams cream cheese 

1 cup whipping cream- beaten to stiff peaks 

1/2 teaspoon vanilla 

1 cup sugar 


Base 


1 cup Biscoff cookies- crushed 

1/8 cup melted butter 



Strawberry Coulis 


1 teaspoon corn starch 

1 tablespoon water 

3/4 cup sugar 

1 cup strawberry puree


1 1/2 cup strawberries- sliced 






Instructions 


  1. Combine the ingredients for the strawberry coulis in a saucepan. Cook on a low heat for 10-15 minutes until thickened. Set it aside to cool completely. 

  2. Combine the ingredients for the base. Mix well and set aside. 

  3. For the cheesecake filling: mix the cream cheese, sugar and vanilla together until smooth. Fold the whipped cream in. Be careful not to over mix the cheesecake filling.

  4. Assemble the cups. Begin with the crumbs, top with cheesecake layer, then the coulis and strawberries. Repeat the layers once more ending with extra Biscoff crumbs. Finally top with a strawberry. 

  5. Chill the Biscoff strawberry cheesecake cups for 2 hours until ready to serve.
