I don’t have much time to do anything extra these days, because the kids have so many activities going on and the holidays are really beginning to get quite insane. And I am just going to say it now…….. I cant wait for my kids to go back to school…..Â

Ingredients
2 cups flourÂ
2 teaspoon baking powderÂ
1/2 teaspoon cinnamonÂ
1/2 cup sugarÂ
1/2 cup brown sugarÂ
1/4 teaspoon saltÂ
1/8 cup butter - room temperatureÂ
1/8 cup oil
2 eggs- room temperatureÂ
1 teaspoon vanillaÂ
3 large ripe bananas- mashedÂ
1/3 cup sour creamÂ
70 grams chocolate chipsÂ
4 lotus cookies/ 3 tablespoons lotus crumbsÂ
1 tablespoon lotus biscoff spread- meltedÂ
InstructionsÂ
Preheat the oven to 180c. Line a loaf pan with parchment paper and set it aside.Â
Combine the flour, baking powder and cinnamon in a bowl. Mix well and set it aside.Â
Mix the sugars, salt, butter, oil, eggs, bananas and sour cream in a bowl. Fold the wet ingredients into the dry ingredients until JUST combined. Do not over mix the batter.Â
Fold the chocolate chips into the batter.Â
Pour the batter into the lined loaf pan. Swirl some of the melted biscoff spread between the batter and swirl it in with a toothpick.
Top the batter with the lotus cookies and crumbs.Â
Bake at 180c for 1 hour until an inserted skewer comes out clean.Â
Cool the cake completely then drizzle over some melted biscoff spread. Slice and serve.Â
