My kids were always rooting around in the cupboards for snacks after school and to be honest, I was tired of the fact that all the snacks in the cupboard were full of junk and had barely any nutritional value. Instead I wanted to create a snack for them that was easy to put together and had lots of protein and a little of the naughty stuff (chocolate chips). This snack was much better for them and they come together in the amount of time it would have taken them to decide on the snack they wanted to have.
These Almond Butter No Bake Chocolate Chip Energy Balls are great. They are perfect for those who can't have peanut butter, like moi. And they come together In less than 15 minutes. Setting time is just a formality. You don't have to wait. My kids just scoop with a spoon and run off, so I never actually have enough mixture to make 20 energy balls.
I love how this recipe is totally customisable. Sometimes, depending on my kids favourites at that time, they may prefer to add some nuts, dry fruits or even some white chocolate chips. When they have nothing to do on the weekends or during the holidays, this seems to keep them busy for a few minutes and they feel super accomplished afterwards.
Preparation Time 10 minutes
Freeze Time 30 minutes (if you can wait)
Yields 20 energy balls
Ingredients
2 cups old fashioned rolled oats
3/4 cup almond butter
1/4 cup maple syrup
1/4 teaspoon cinnamon
2 tablespoons Chia Seeds
1/3 cup dark chocolate chips
Instructions
Combine the almond butter, maple syrup and cinnamon in a bowl. Mix well with a spatula.
Add the rest of the dry ingredients- the oats, chia seeds and dark chocolate chips. Fold in the ingredients.
Scoop and roll the mixture into balls and lay them on a parchment lined tray.
Freeze them for 30 minutes.
Store in the fridge for up to 2 weeks, although they never last that long in my house.
