For me, peaches signal the beginning of the summer season and you know what that means, lots and lots of delicious summer desserts. I just love biting into a succulent and juicy peach. The juices running down my chin and arms. Yes, I am a messy peach eater, which is why I prefer to make them into a dessert. To maybe save myself from some embarrassment of the mess of a peach.
My mum used to eat peaches and sprinkle some salt onto them. I prefer to eat them that way too now. The salt just brings out more flavour. I didn't think it would. But it does. You gotta try it.
For this recipe, I left the skins on and chopped the peaches up as is. It honestly made removing the pits easier. My friend has peach trees at her farm and bought me a bowl of peaches and I didn't know what to do with them. So I decided to turn them into a crumble with a crispy, oat topping.
Preparation Time 10 minutes
Cook Time 30-35 minutes
Serves 6
4 large peaches- chopped and pitted
500 grams strawberries- hulled and halved
1/4 cup brown sugar
1/2 teaspoon cinnamon powder
1 cup all purpose flour
1/2 cup oats
1/4 cup brown sugar
1/4 teaspoon cinnamon
1/2 cup butter- cold and in cubes
Preheat the oven to 180c
Combine the peaches, strawberries, brown sugar and cinnamon in a bowl. Mix well and set aside.
Make the topping: combine the flour, oats, sugar and cinnamon in a food processor. Pulse until combined.
Add the cold butter and pulse again until a coarse topping forms.
Pour the filling into a pyrex baking dish.
Sprinkle the crumble topping evenly over the fruit.
Bake at 180c for 30-35 minutes, until hot and the filling bubbles.
Serve with vanilla ice cream.
