Viral Doner Kebab Recipe

I have been seeing this viral Doner kebab recipe all over social media and I can understand why now. I already have a recipe for traditional Doner kebab on my channel so I really wanted to see what the difference was between them. I am so glad I tried this recipe out. It seemed a little easier than having to cut slices out of the Doner kebab after baking. I served it with salad, fries, the Doner white sauce and Doner red sauce. It reminds me of Iskandar kebab that I ate in Turkiye this summer. 


Viral Doner Kebab

Preparation Time 20 minutes

Cook Time 15 minutes

Serves 4


Ingredients 


Doner Kebab


750 grams beef mince (80:20 meat to fat ratio)

1 medium onion 

1 tablespoon garlic paste 

1 teaspoon salt 

1 teaspoon paprika 

1 teaspoon Pul Biber - Turkish Crushed Red Chilli 

1 teaspoon red chilli powder 

1 teaspoon garlic powder 

2 tablespoons olive oil 

2 tablespoons yogurt 

Juice of 1 lemon 


2 tablespoons butter - melted 



Red Doner Sauce 


1 tablespoon tomato paste 

2 tablespoons oil 

1 tablespoon butter 

1/2 teaspoon paprika 

1/2 teaspoon black pepper 

1/2 teaspoon salt 

1/2 teaspoon thyme 

1 cup water 



White Doner Sauce 


3/4 cup Greek yogurt

3 tablespoons mayonnaise

3 garlic cloves- minced 

Juice of 1/2 a lemon

2 teaspoons dill fresh- finely chopped

1 tablespoon olive oil

A pinch sugar

A pinch salt

A pinch pepper




Instructions 


  1. Blend the onions and garlic paste in a food processor until ground down. Add the beef, salt, paprika, pul biber, red chilli powder, garlic powder, olive oil, yogurt and lemon juice. Blend until smooth. 

  2. Divide the meat into 5-6 balls. Spread in a thin layer between 2 sheets of parchment paper. Use a rolling pin to make it as thin as possible. Remove the top layer of parchment paper and begin rolling the paper up like a scroll beginning from the narrow end. Place the roll on a baking sheet. Repeat with the rest of the meat. 

  3. Air fry at 180c for 10 minutes or bake it in the oven at 180c for 10 minutes and broil for 2 minutes further. 

  4. Remove the meat from the air fryer/ oven and unwrap it. Break it into smaller pieces. Keep all those juices in the pan. Mix in 2 tablespoons butter. 

  5. For the white Doner sauce: combine all the ingredients. Adjust the seasoning and chill 1 hour. 

  6. For the red Doner Sauce: saute the tomato paste, oil and butter for 30 seconds. Slowly whisk in 1 cup water and then add the seasonings. Bring it to a boil and then remove it from the heat. Bring it to room temperature. 

  7. Heat pita bread on the stove until golden, then assemble the Doner pita wraps. Serve with salad and fries
