Twix Cookies

My husband’s favourite chocolate is the Twix. I wanted to use that as inspiration for my cookie box this season. So I came up with the Twix Cookies. They were so good, I had people asking for the recipe again and again which is why I had to make them again and film it especially for them. What is better than a rich butter cookie, filled with salted caramel and topped with a thick, chocolate ganache. Mmhmm.... Delicious!
Preparation Time 20 minutes
Chill Time 1 hour
Bake Time 12 minutes
Yields 2 dozen
Ingredients
1 cup butter- softened
1/2 cup cream cheese- room temperature
1 cup sugar
1 egg - room temperature
1 teaspoon vanilla
2 1/2 cup flour
1/4 teaspoon salt
1/2 teaspoon baking soda
1 cup salted caramel- recipe here
Ganache
1 cup chocolate chips
1/2 cup heavy cream
Instructions
Line 3 baking sheets with parchment paper. Set them aside.
Beat the butter and cream cheese until smooth. Add the sugar, egg and vanilla. Mix it in until combined.
Add the flour, salt and baking powder. Mix it in until just combined. Chill the dough for 1 hour.
Remove the dough from the fridge. Preheat the oven to 180c.
Scoop 1 1/2 tablespoons cookie dough, roll it into a ball and place 2 inches apart on the lined baking sheets.
Bake the cookies at 180c for 11- 12 minutes until golden. Cool the cookies.
Create dips in the middle of the cookie with a spoon or a quarter teaspoon measuring spoon. Pour warm salted caramel in the middle of the cookie. Chill the cookies for 10 minutes until the caramel sets.
Make the ganache by heating the chocolate chips and cream in the microwave at 30 second bursts until smooth.
Pour ganache over the cooled caramel. Then chill the cookies again for 10-15 minutes until the ganache sets.
