Sweet and Sticky Chicken Drumsticks

I’m always looking to make as many recipes ahead of time. Marination is key to locking in lots of flavour. You can always marinate meat the night before you need to cook the meat. That is why these sweet and sticky chicken drumsticks are perfect. Marianne them the night before, toss them in the oven and thicken the marinade to make the sauce. Simple. As. That. Serve it with white rice and herbed green beans.

Preparation Time 10 minutes

Cook Time 30 minutes

Serves 4







Ingredients

1/2 cup balsamic vinegar

1/2 cup honey

!/3 cup brown sugar

1/4 cup soy sauce

3 cloves garlic- minced

12 chicken drumsticks- skinless

1 teaspoon corn starch- mixed in 2 tablespoons water

2 tablespoons sesame seeds







Instructions

  1. Combine the vinegar, honey, brown sugar, soy sauce and garlic in a bowl. Mix well. Pour the marinade into a ziploc bag. Add the chicken drumsticks and shake the bag. Marinate the chicken a minimum 2 hours, or even overnight.

  2. Remove the chicken 30 minutes before cooking.

  3. Preheat the oven to 200c. Line a baking sheet with foil. Place the chicken on the sheet. Reserve the marinade for the sauce. Bake the chicken for 30 minutes.




4. In the meantime, pour the marinade into a saucepan. Add the cornstarch slurry. Mix well.

5. Cook on a low heat for 3-4 minutes until thickened. Do not thicken it too much. It will thicken as it cools.

6. Use a pastry brush to brush the marinade onto the chicken legs. Turn them over and brush over the other side. Bake a further 5 minutes.

7. Top with sesame seeds and serve immediately.
