Sautéed Garlic Mushrooms

Mushrooms are one of those simple side dishes that can make any meal feel extra special. These sautéed mushrooms are buttery, garlicky and packed with so much flavour. Cooking them without stirring at first gives them a beautiful golden colour and delicious texture. They come together in just a few minutes using ingredients you probably already have at home. Serve them alongside chicken, steak or mashed potatoes, or spoon them over warm toasted bread!

Serves 4
Ingredients
450g white mushrooms
2 tablespoons oil
2 tablespoons butter
¼ cup chicken or vegetable stock
2 garlic cloves, minced
A pinch of dried thyme
Salt and black pepper, to taste
A pinch of dried parsley
Instructions
Clean the mushrooms and cut them into thick slices.
Heat the oil and butter in a large frying pan over medium-high heat.
Add the mushrooms, spreading them across the pan in an even layer. Leave them undisturbed for 4–5 minutes, or until beautifully browned on one side.
Toss the mushrooms, then pour in the chicken or vegetable stock. Continue cooking until the liquid has almost completely evaporated.
Add the minced garlic and dried thyme. Cook for another 3–4 minutes, stirring occasionally, until the mushrooms are tender and the garlic is fragrant.
Season with salt and black pepper. Sprinkle with dried parsley and serve immediately.
