Salted Caramel Pear Tarts

Easy desserts are great when I have guests coming over in less than 30 minutes and I need something delicious quickly, then these salted caramel pear tarts are one of those desserts I’ll make! I love how the puff pastry is crispy, but the pears are juicy, topped with that salted caramel. I serve it with vanilla custard or ice cream, depending on the weather.

Ingredients
8 squares/ 375 grams puff pastry - cold
1 egg- beaten
4 pears- medium
8 teaspoons brown sugar
8 teaspoons heavy cream
1/2 teaspoon salt - optional
Instructions
Preheat the oven to 190c. Line 2 baking sheets with parchment paper. Place the puff pastry squares on the lined pans 1 inch apart from each other.
Cut the puff pastry square with a sharp knife to create an ‘L’ shape 1 cm away from the edge of the pastry in opposite corners. Pick up the corners and cross them over to create a criss cross pattern. Brush the edges with beaten egg. Chill the pastry in the fridge while getting on with the remaining steps.
While the pastry chills, peels the pears, slice them in half and cut them into 1/4 inch slices.
Take the pastry shells out of the fridge and place one half of the pear in slices in the centre. Fan them out so they cover the puff pastry.
Sprinkle over 1 teaspoon brown sugar and 1 teaspoon heavy cream over each pear. Add a pinch of salt if you want.
Bake the pastries at 190c for 20-25 minutes until puffed up and golden brown. The pears will become caramelised and golden.
