Red Velvet Brownies

I have been extremely busy these days. Many guests and dinner parties, so I haven’t had the time to film and upload as many videos as I usually do. But today after an afternoon of entertaining, I decided to make some red velvet brownies, because I was craving something sweet! They tasted amazing. I have one with my afternoon tea and now I am enjoying one whilst I type and drink my millionth cup of tea today!

Red Velvet Brownies

Preparation Time 10 minutes

Cook Time 25-30 minutes

Yields 16 brownies

3/4 cup butter- melted

1 1/4 cup sugar

1 teaspoon gel red food colour

1 teaspoon vanilla

1 teaspoon vinegar

2 eggs- room temperature

1/4 cup cocoa powder

1/4 teaspoon salt

3/4 cup flour

Cream Cheese Frosting

113 grams/ 4 oz cream cheese- room temperature

4 tablespoons butter

1 teaspoon vanilla

2 cups icing sugar

1 teaspoon heavy cream

  1. Preheat the oven to 180c. Line an 8 inch square cake pan with parchment paper. Set it aside.

  2. Beat the butter and sugar together until smooth. Add the red food colour, vanilla and vinegar. Mix it in.

  3. Add the eggs and cocoa powder. Stir to combine.

  4. Add the flour and salt and fold it in until just combined. Be careful not to over mix the batter. Mix only until no spots of flour remain.

  5. Pour into the prepared lined pan and bake at 180c for 25-30 minutes. Remove from the oven and cool completely.

  6. For the cream cheese frosting, beat the cream cheese and butter together until smooth. Add the icing sugar, vanilla and heavy cream. Mix until smooth. Be careful not to over beat the mixture.

  7. Once the brownies are completely cooled, spread the cream cheese frosting over the top of the brownies.

  8. Slice and Serve.
