We all love our potatoes right? They are delicious, filling and so adaptable. You can fry, boil, steam, bake or even mash 'em. I love potatoes in all forms! And I'm always looking for new ways to make them more exciting.
These potato cheese pancakes were fantastic. I was looking for simple recipes that used minimal ingredients so that I could cater to those who have less time or even those who are on a budget. These potato cheese pancakes were on the top of my list. They are yummy, filling and the simple flavour speaks for itself.

Makes 6 potato cheese pancakes
Ingredients
300 grams potatoes- peeled and boiled.
1 teaspoon salt
3 tablespoons rice flour
1/2 cup grated mozzarella cheese
5-6 tablespoons vegetable oil- for frying
Instructions
Peel and boil the potatoes. Drain and set them aside to cool 5 minutes.
Mash them until they are completely smooth.
Add the salt and mix it well.
Add the rice flour and mix through again.
Divide the potato mixture into 6 balls.
Flatten each ball in the palm of your hand. fill with 1 tablespoon of grated mozzarella. Bring the edges of the potato together and roll into a ball.
Flatten the ball into a cutlet shape. This ensures that the cheese melts evenly when frying.
Heat the oil in a frying pan on a medium heat.
Fry 3 potato cheese pancakes at a time, for 3-4 minutes until golden brown.
Remove them from the oil and blot on kitchen towel.
Serve with your favourite sauces.
