Palmier Cookies, seems like a a complicated French dessert. But what I told you that these delicate crispy puff pastry treats are so easy to make and use only 3 ingredients. Don't believe me? Keep reading. See? Doesn't get easier than that.

Serves 4
Ingredients
1 sheet Puff pastry- thawed
4 tablespoons melted butter
1 cup/ 200 grams sugar
Instructions
Roll out the puff pastry into a long rectangle.
Brush melted butter over the sheet of puff pastry.
Sprinkle half the sugar over one side of the pastry. Press the sugar into the puff pastry by rolling over with a rolling pin.
Flip the pastry sheet and repeat with butter and the remaining sugar.
Tightly roll the pastry starting from the bottom to the middle. Then do the same with the top of the pastry, rolling it tightly to the middle.
Wrap the roll in plastic wrap and refrigerate 30 minutes.
Preheat the oven to 220c/ 425F. Line a baking tray with parchment paper.
Unwrap the palmier log. Cut off the uneven ends of the log.
Cut 1/2 inch rounds from the log. Place the slices 2 inches apart on the baking sheet.
Bake the palmier cookies for 15 minutes, flipping them halfway through, until the sugar is caramelised. The cookies will be golden brown.
Cool on a rack. Serve and enjoy.
Notes
You can change up the fillings and instead add 1/4 teaspoon cinnamon to the sugar and make them into cinnamon sugar palmier cookies. Or add 3 tablespoons crushed pistachios to the sugar and roll them up like usual to make pistachio Palmier cookies.
