The summer means loads and loads and loads of ice cream. Sometimes we don’t want just the store brand ice cream and we want something special. And this No churn coconut ice cream is truly special.

Preparation Time 10 minutes
Chill Time 8 hours or overnight
1 1/2 cup heavy whipping cream- cold
1/2 cup sugar
1/2 teaspoon coconut essence
2 cups full- fat coconut milk- cold
1/2 can / 200 grams sweetened condensed milk
1/2 cup dried shredded, unsweetened coconut
Combine the cream, sugar and coconut essence. Beat until stiff peaks and doubled in volume.
In another bowl, combine the coconut milk, condensed milk and the shredded coconut. Just mix until combined.
Fold the cream into the condensed milk mixture.
Pour the ice cream into a container. Top with an additional 2 tablespoons shredded coconut.
Freeze the ice cream for 8 hours or better yet, overnight.
