Mixed Berry Lasagne

Easy desserts that require the least amount of work and take minutes to come together are perfect for us busy mums. This mixed berry lasagne literally took minutes to bring together and while I was preparing the rest of the dinner dishes, I let this chill in the fridge. At least I didn’t have to worry about dessert, or having to put it in the oven while dinner was on the table. It doesn’t get better than that, does it?

Preparation Time 35 minutes 

Chill Time 3 hours 

Serves 24 


Ingredients


Crust 

36 golden Oreos

6 tablespoons butter- melted 


First Layer 

228 grams cream cheese 

3/4 cup sugar 

228 grams whipping cream- whipped

Second Layer 

1 box strawberry/ raspberry jelly 

1/2 cup boiling water 

228 grams whipping cream- whipped 


Topping

228 grams whipped cream

3 cups mixed fresh berries 







Instructions 


  1. Combine the crust ingredients. Press into the base of a 9x 13 inch pyrex dish. Chill until ready for next layer. 

  2. For the first layer: Whip the cream cheese and sugar together for 2 minutes. Add the whipped cream and milk. Spread it over the crust. Top with 1 cup mixed berries. Chill 10-15 minutes. 

  3. For the second layer: Combine the jelly and the hot water. Mix well until jelly crystals dissolve. Do not let it set, but cool it down to room temperature. Fold in the whipped cream. Spread it over the cream cheese layer. Chill 30 minutes. 

  4. Top with whipped cream and then the mixed berries. Chill for 2-3 hours until ready to serve.
