We host a lot of BBQs at our house as soon as the weather changes. Which means, lots of salads, sides and deserts. Of course we have loads of mains too, but the sides can be more fun to make. This loaded potato salad is no exception. It is easy to make and great to serve along side your scrumptious mains.
Preparation Time 10 minutes
Cook Time 20 minutes
2 kg potatoes- peeled, and cubed
2 sticks celery- sliced
1-2 tablespoons olive oil
1 tablespoon vinegar
1 cup mayonnaise
3/4 cup Sour cream
1 teaspoon salt
3/4 teaspoon black pepper
220 grams turkey bacon- cooked, cooled and chopped
6 green onions- chopped
1 1/2 cups cheddar cheese- shredded
Combine the olive oil, vinegar, mayonnaise, sour cream, salt and pepper in a large bowl. Mix well.
Add the rest of the ingredients and mix well. Chill until ready to serve.
Top with additional cheese, green onions and bacon before serving.
