Grapefruit Sour Cream Cake

I received a huge fruit crate of grapefruit from a relative and I have been making so many grapefruit recipes. But this grapefruit sour cream cake was a banger! It was delicious, citrusy, sweet and divine. My kids said it tasted like ‘summer’. I think that’s a good thing. I have made this cake 4 times this week. Once people tried it, I was asked to send it to their homes. I couldn’t say no… You will love it just as much as they did.

Cook Time 45 minutes
Yields 8-10 slices
Ingredients
Cake
1 1/2 cups flour
1/4 teaspoon salt
1 teaspoon baking powder
1 cup sugar
1 grapefruit- zested
1/3 cup butter- melted
2 eggs- room temperature
3-4 tablespoons grapefruit juice
1/2 cup sour cream
2 tablespoons milk- optional
Glaze
1 1/2 cups icing sugar
1 tablespoons sour cream
2-3 tablespoons grapefruit juice
Instructions
Preheat the oven to 180c. Line a loaf tin with parchment paper and set it aside.
In a large bowl, combine the sugar and zest. Rub the zest into the sugar, the zest will release oils and the sugar will resemble wet sand.
Add the eggs, juice and butter. Mix it all in until well combined.
Add the sour cream and milk.
Fold in the dry ingredients until just combined. Be careful not to over mix the batter.
Pour the batter into the lined pan and bake it at 180c for 45 minutes. An inserted skewer will come out clean. Set it aside to cool
Once the cake is cooled, you can make the glaze. Combine all the ingredients together until a smooth glaze forms.
Pour the glaze over the cooled cake and allow it to set.
Slice and serve.
