Eggless Mango Mousse

Mango season means I am always looking for different ways to use up all those delicious mangoes! And when the weather is hot, I really don't want to spend hours in the kitchen making dessert. I want something quick, easy and preferably something I can leave in the fridge until we are ready to eat it.
This Eggless Mango Mousse is exactly that. It is light, creamy and full of mango flavour, with a simple mango coulis and fresh mango chunks on top. I also love that there are no eggs or gelatine in this recipe, so there really isn't much work involved.
Just make sure you give the mango coulis enough time to cool completely before you start putting everything together. Then portion the mousse into your serving glasses, pop them into the fridge and forget about them until dessert time!
If you love mangoes, you definitely need to give this one a try. It is such a lovely chilled dessert for summer and looks beautiful served in individual glasses too.

Ingredients
Mango Coulis
½ cup mango puree
1 teaspoon sugar
1 teaspoon cornstarch
2 tablespoons water
Mango Mousse
1 cup heavy cream
1–2 tablespoons sugar
1½ cups mango puree
For Topping
Mango coulis
Mango chunks
Instructions
Add the ½ cup mango puree and 1 teaspoon sugar to a small saucepan.
Mix the cornstarch with 2 tablespoons of water until smooth. Add this to the mango puree.
Cook for about 2 minutes, stirring, until the mixture thickens. Remove from the heat and leave the mango coulis to cool completely.
Add the heavy cream and 1–2 tablespoons of sugar to a large bowl. Beat on high speed until peaks form.
Take ½ cup of the whipped cream and gently fold it into the 1½ cups of mango puree.
Once combined, gently fold in the remaining whipped cream until the mousse is smooth and evenly combined. Be careful not to over mix.
Spoon the mango mousse into individual serving cups or glasses.
Top with the cooled mango coulis and fresh mango chunks.
Chill in the refrigerator until ready to serve.
