Desi Spiced Roasted Potatoes 

My whole family loves roast chicken. This time I decided to make desi spiced roasted potatoes. They were so crunchy, fragrant with fluffy centres. I served the desi spiced roasted potatoes with my Desi Yogurt Marinated Chicken. If you want a change up from the normal roasted potatoes, then this is the recipe you have to try! 



Desi Spiced Roasted Potatoes 


Preparation Time 15 minutes 

Cook Time 40 minutes 

Serves


Ingredients 


500 grams potatoes 

4 tablespoons olive oil 

1/2 teaspoon mustard seeds- optional 

1/4 tablespoon cumin powder 

1/2 tablespoon coriander powder 

1 teaspoon garlic paste 

1 teaspoon ginger paste 

1/4 teaspoon turmeric powder 

1/2 teaspoon garam masala powder 

1 teaspoon salt 

1 lemon- sliced 


Mint and coriander yogurt- to serve 




Instructions 


  1. Preheat the oven to 200c.

  2. Wash, peel and cut the potatoes into large chunks. Boil the potatoes in salty water for 4-5 minutes. Drain the potatoes and shake them in the colander to fluff them up slightly. 

  3. Mix all the spices and oil together in a bowl. 

  4. Add the spiced oil to the potatoes and toss them in to coat well. 

  5. Arrange the potatoes in a single layer in a roasting pan. 

  6. Bake the potatoes at 200c for 40 minutes. Mix them up ver 10 minutes. 

  7. Once the potatoes are cooked, garnish the potatoes with coriander if using. Serve the potatoes with lemon wedges, mint and coriander yogurt.
