Creamy Roasted Tomato Soup With Grilled Cheese

My earliest memories were surrounded by food. When I was around 3-4 years old, I would go to my grand dad’s restaurant in the afternoon and he would always have a bowl of creamy roasted tomato soup with grilled cheese, ready for me to enjoy. He would sit with me and talk to me about his day. It was the highlight of my day and the beginning of a beautiful relationship. Since then, food has been such an important element to our lives. Until he passed, I still sat with him and talked to him about my day: only difference was that in the end days of his life, I would feed him.

Serves 4
Ingredients
1.5 kg ripe tomatoes
1 head of garlic - cloves
2-3 tablespoons olive oil
Salt and pepper- to taste
1-2 large onions- peeled and quartered
2 tablespoons tomato puree
20 grams basil- optional
1 litre vegetable stock
100 ml double cream
Instructions
Place the tomatoes, onions, garlic, salt and pepper, with some salt, pepper and olive oil on a baking tray. Roast everything at 180c for 35 minutes until the tomatoes break down.
Blend everything with the vegetable stock until smooth.
Pour the soup into a large pot. Add the heavy cream and adjust the seasoning. Cook it on a low heat for 3-4 minutes.
Make the grilled cheese to your preference.
Serve the soup with a drizzle of cream, olive oil and some cracked pepper.
