Classic Biscotti

My mother has always has a tea ritual. When it’s time for tea, she needs a little snack with each cup. Biscotti are something I know she will enjoy. The flavour is so simple and classic, but the addition of slivered almonds adds a delicious crunch!
Add different nuts and dried fruit to the biscotti and you can change up the flavours.

Preparation Time 10 minutes
Cook Time 45 minutes
Yields 24 biscuits
Ingredients
3/4 cup sugar
1/2 cup butter- room temperature
1 teaspoon vanilla
1/2 teaspoon almond extract
2 eggs- room temperature
2 cups flour
1 1/4 teaspoon baking powder
1/4 teaspoon salt
1 1/4 cup slivered almonds
Instructions
Preheat the oven to 180c. Line a baking sheet with parchment paper and set it aside.
Beat the butter and sugar together for 3-4 minutes until light and fluffy. Add the eggs and extracts.
Add the eggs one at a time, making sure you mix one in properly before adding the other.
Fold the dry ingredients into the egg mixture.
Divide the dough into 2 logs.
Create a log shape and place them on the parchment lined tray.
Bake the logs at 180c for 30 minutes. Remove them from the oven and allow to cool for 5 minutes. Then slice the logs into 1/2 inch thick pieces.
Place them back on the tray wide side down. Bake at 180c for 15 minutes, flipping them half way through (7.5 minutes each side). Transfer the cookies to a cooling rack to cool completely.
Store in airtight container for 2 weeks.
