Fudge Squares
200 grams chocolate chips
200 grams brown sugar
175 grams butter
3 eggs- separated
140 grams flour
1 teaspoon vanilla
Zest of 1 orange
Topping
200 grams cream cheese
1/2 teaspoon vanilla
50 grams icing sugar
The zest of 1/2 an orange
Instructions
Preheat the oven to 160c. Line an 8 inch square baking tin with parchment paper. Set it aside.
Place the butter, sugar and chocolate in a heatproof bowl. Heat in the microwave at 30 second bursts until smooth. Cool it for 10 minutes.
Add the egg yolks, vanilla, flour and zest. Mix it in until smooth.
Beat the egg whites in a separate bowl until stiff peaks form.
Fold the egg whites into the chocolate mixture in 2 additions. Be careful not to beat any air out the egg whites.
Pour the batter into the lined baking pan.
Bake the fudge squares at 170c for 25 minutes, until the middles are set. Remove them from the oven and allow them to cool to room temperature.
Mix the ingredients for the topping until just combined. Do not beat it in, just mix it all tougher with a spoon.
Once the chocolate orange fudge squares are cooled, cut them into squares.
Top with the cream cheese topping and serve.
