We don't want to stand over the stove every morning and make a full breakfast. But these chocolate chip muffins are quick and easy to make. I serve these with a fruit smoothie, before they rush off to school. And obviously kids love anything with chocolate in them so they are always a huge hit in our house.

Yields 12 jumbo muffinsÂ
IngredientsÂ
2 1/2 cups / 315 grams flourÂ
1 tablespoons baking powderÂ
1/2 teaspoon baking sodaÂ
1/2 teaspoon saltÂ
1/2 up oilÂ
1 cup/ 200 grams sugarÂ
2 eggs
1 cup buttermilkÂ
1 tablespoon vanilla exÂ
1 1/2 cup chocolate chipsÂ
For ToppingÂ
Some chocolate chipsÂ
Coarse sugar
InstructionsÂ
Preheat oven to 180c. Line muffins pan with liners or grease the pan with oil.Â
Combine the dry ingredients in a bowl then set them aside.Â
In another bowl, combine the oil, eggs, buttermilk and vanilla. Mix it well.Â
Fold the wet ingredients into the dry ingredients until a few flour spots remain. Do not over mix.Â
Fold the chocolate chips into the batter.Â
Divide the batter between the muffin cases. Fill them to the top. Sprinkle over some coarse sugar and some additional chocolate chipsÂ
Bake the muffins at 200c for 5 minutes then at 180c for 12 minutes.Â
Remove them from the oven and allow them to cool for 10 minutes in the muffin tray. Then take them out of the pan and allow them to cool completely on a wire rack.Â
