Chicken Shashlik 

I have finally come to the conclusion that I spoil my family too much. always creating new recipes for them to enjoy, trying my best not to repeat meal ideas and making sure to incorporate all their favourite flavours. This chicken shashlik was no exception. I paired this delicious dinner with peri peri rice! Everyone really enjoyed this quick and easy chicken shashlik recipe. If you don’t like rice, switch it up with some seasoned potato wedges! You’ll really enjoy it. 



Chicken Shashlik


Preparation Time 10 minutes 

Cook Time 30 minutes 

Yields 8 skewers/ Serves 4 


Ingredients 


500 grams chicken breasts- cubed 

2 medium peppers- chunks 

2 large tomatoes- deseeded and cut into chunks 

1 large onion- chunks 


Oil for frying/ baking 


Marinade 


2 teaspoon salt 

1 teaspoon white pepper 

1 teaspoon cumin powder 

2 teaspoons kashmiri red chilli powder 

4 tablespoons tomato paste 

1 tablespoons garlic paste 

2 tablespoons soy sauce 

1 tablespoon red vinegar 

1 tablespoon oil 




Instructions 


  1. Combine all the marinade ingredients. Add the chicken. Mix well and coat the chicken. 

  2. Marinate the chicken for 30 minutes.  

  3. Soak the skewers if using wooden skewers for 30 minutes in water. If using metal skewers you can skip this step. 

  4. Skewer the chicken and vegetables onto 8 skewers. 

  5. Cook the chicken for 4-5 minutes on each side if doing it on the stove. If using the oven, bake the chicken skewers for 15-20 minutes, turning the skewers every 5 minutes. Broil 2 minutes before serving.

  6. Serve with peri peri rice
