Loaded potato skins are a great way to get the kids to enjoy their favourite flavours, a proper meal that seems like a snack. It's perfect for the kids! It is a great way to sneak in some vegetables. The flavour of the chicken is so good, they won't even notice the vegetables!

Serves 4-6
Ingredients
4 potatoes- boiled and cut in half horizontally
1 tablespoon olive oil
Salt and pepper
2 cup roasted chicken- shredded
1/2 cup BBQ sauce
1/2 small red onion- thinly sliced
1 small jalapeño- thinly sliced
1 cup cheese - shredded
Instructions
Preheat the oven to 180c. Scoop the middles of the potatoes and put them in a bowl.
Place the skins in a baking sheet, greased with oil.
Add chicken, sauce, onion, jalapeño, salt, pepper and half the cheese to the potatoes. Mix it through.
Stuff the potato skins with the chicken mixture. Top with the remaining cheese and bake at 180c for 15 minutes.
Garnish with spring onions and extra bbq sauce
