100 grams butter- melted
225 grams digestive biscuits- crushed
75 grams butter
75 grams light brown sugar
397 grams sweetened condensed milk
1/2 cup heavy cream - whipped to stiff peaks
chocolate shavings - to serve
Crush the digestive biscuits until crumbs. Add 100 grams melted butter. Mix until mixture resembles wet sand.
Press the mixture into the 8 inch tart tin. Chill the tart crust for 1 hour.
To make the caramel sauce: melt the butter in a heavy bottom saucepan. Add the light brown sugar. Mix until the sugar dissolves. Add the condensed milk and mix well.
Stir while you bring it to a boil and a thick caramel forms. Turn off the heat and set it aside for 3-4 minutes.
Pour the caramel over the chilled base. Chill the tart in the fridge for a couple hours.
Remove the tart from the pan and place on a plate.
Slice bananas and place them atop the caramel.
Top with whipped cream and chocolate shavings.
Chill in the fridge for 2 hours before serving.
